Mama's Tinola
It began a typical conversation of my cousins, when we talk about food, from delicious Philippine food, the best of them, and up most likely chicken recipe. They all said tinolang manok. I was even surprised because I thought "adobo" is the best of chicken recipe. The results reflect on the rainy weather. We wanted a hearty soup that could give by this dish. We imagine how we long for soup that is hotly serve by our mother. It could awake our stomach and brings calmness in my throat.
Upon our conversations one of my cousins told us of how her mother cooks this dish for them. Some of them cook it in an instant where they use preservatives for onion, garlic and added meat taste with sayote. The way they prepare their tinola makes my Mom outstand from them and they all love my Mama's tinola. The only secret of my Mom is that she uses fresh and natural ingredients. Fresh onion, garlic, ginger, with a bit of brine (patis). Veggie sayote wasn't only the vegetables she mixes but also she put pear shaped yellow fruit (papaya) and squash. She also put chili leaves. I also tell to them how she cooks it. First soothe all the spices and put the magic of washed rice. Put the tender meat of chicken and after a minute of waiting my Mama's tinola is ready to serve. Quarter to twelve when I ended our conversation. A dashing wind blow that quiet the moment. After that we began laughing as we hear the big sound that comes deeper in the small intestine of my cousins. And the only things that we all said that i want to go home and we want your Mama's tinola. We ran fast even the rain is continuously pouring and don't have umbrella but we decided to ran to save our stomach.
After a long run, we all became winner because our prize is what we all long for a while ago. This is the dish that we all crave for on this rainy day. The weird thing that happens to us is that we eat this dish while we are totally wet. As we first enter the door, and smell that dish, my cousins started to count and started to run in the dining table as if the race wasn't finish. We don't even care if were wet because all we want is to eat and were hungry. My mother just looks on us and smile. I am afraid that time and it's quite annoying and my mother will surely slap me. So that I wonder when she said, "when your done, go outside…… dance in the rain, and I will cook for another tinola. We happily look each other but as we look outside we are all dismayed because the rains stop.
